Recipe:

Ingredients: 10 – Crabs 5 lbs Clams 3 lbs of Prawns 3 large onions ½ bunch of fresh parsley chopped 6 cloves of garlic chopped 1 green chili pepper chopped 4 small sprigs of rosemary chopped 1 tsp oregano 1 tsp salt 1 tsp pepper 1 tsp nutmeg 4 small cans of Del Monte tomato sauce 5 oz of Sauternes

Directions: - Important to buy LIVE FRESH crabs, otherwise sauce will be dry and tasteless.

- Wash crabs and clams thoroughly

- Kill live crabs humanely

- Save yellow (FAT) and bluish juices

- Don’t have the store do it as you’ll lose good juice and fat. It may look horrible but it’s the secret to good taste

- In a large pot, sauté chopped onions and celery

- Season with salt, pepper and nutmeg

- When onion, celery becaome transparent, add the chopped parsley, rosemary, garlic, chilli pepper, oregano

- Saute five minutes

- Add tomato sauce and sauternes

- Add crab fat and juices

- Cook 10 minutes - Add clams

- Add crab and prawns

- Cover pot and let it steam for 20-30 minutes

- Top pot every 5 minutes and ladle sauce over prawns

- Sauce should be more orange than red color

Recipe:

TWIN color, zesty garden pasta.

Ingredients:

 1 1/2 tablespoons unsalted butter

 1/4 cup olive oil

 1 medium-sized onion, chopped

 1 shallot, finely chopped

 1 clove of garlic, finely chopped

 1 lb mixed asparagus and broccoli (asparagus cut into 1/2 size slices and broccoli into

small 1inch florets)

 1 bag of red lentil penne pasta (from Trader Joe’s)

 a few pinches of salt and several grinds of pepper

 1 1/2 cups of peas (frozen)

 1 1/2 cups white wine

 2 cups veggie broth

 zest and juice of 1 1/2  lemon (washed)

 Parmesan cheese

 

Directions:

1. Heat a large frying pan to medium heat and let warm. Add oil.

2. Add your chopped onions.

3. Sauté the onions for about 6 minutes, until translucent.

4. Add the shallots and let cook for a few minutes with the onions

5. Add the garlic and cook for about 1 minute

6. Add butter to the pan, then add the broccoli and asparagus. Salt and pepper to taste

7. Sauté for about 8 minutes.

8. Then add lemon juice, lemon zest, veggie broth and wine. Cover and simmer for about

10-12 minutes (or longer). You want the asparagus nice and soft.

9. Add the peas a few minutes before done so they don’t get mushy.

10. While the veggies are simmering, boil your pasta according to the directions on the

package, then strain and set aside.

11. Add the pasta to the sauté pan and toss together.

12. Serve warm and enjoy!

INGREDIENTS

Wonton Chips

2 tablespoons butter, melted

1 teaspoon canola oil

25 wonton sheets, halved diagonally

salt

Pork Butt

1 lb. pork butt meat

3 tablespoons sugar, divided use

¼ cup fresh grapefruit juice

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon finely chopped garlic

1 teaspoon kosher salt (1/2 teaspoon if using table salt)

1 tablespoon canola oil

½ cup mild cheddar

½ cup monterey cheese

1 cup shredded purple cabbage

1 Serrano chili, sliced

Sriracha Crema

½ cup sour cream

3 tablespoons Sriracha sauce

 

INSTRUCTIONS

To make wonton chips:

Heat oven to 350 degrees. Line a bake sheet with foil. In a small bowl mix together butter and canola oil until well combined. Use a pastry brush and cover both sides of the wonton pieces with the butter mixture. Salt to preference. Bake for 12 - 14 minutes at 350 degrees F, rotate bake sheets half way through. Remove from oven and transfer chips to a cooling rack in a single layer. Set aside

 

To make Pork Butt.

Sprinkle 1 tablespoon of sugar on each side of beef; set aside for 10 minutes. Pour grapefruit juice over beef and massage it into the meat; set aside for 10 minutes. Slice beef as thin as possible and set aside to make marinade.

 

In a large bowl, mix together remaining 1 tablespoon sugar, soy sauce, sesame oil and garlic. Toss sliced beef in marinade; set aside for 10 minutes.

 

Heat a 10 inch skillet with 1 tablespoon of canola oil. Cook and stir beef in three batches (batch cooking will prevent steaming the beef).

 

To assemble nachos:

Heat oven to 425 degrees F. Cover bottom of casserole dish with wonton chips, layer with cheese and meat. Repeat once more and place assembled nachos into the oven and bake at 425 degrees F until cheese is melted. Serve with purple cabbage, sliced serrano chili and Sriracha Crema.
